I am really putting forth effort to cook more (above basics). Food prep for the past 5 years has been basic proteins, veggies, and sweet potatoes- nothing more. So what changed last week? Well my son, whom I love more than life, has decided he wants to try out for football next year so we are spending his entire freshman year working on getting him prepared. For him- this means eating better. I am working to teach him that life can have treats and healthier versions of his favorite foods without sacrificing all his hard work through the week.
Today I took a chance on making a berry cobbler- but a healthier version, that isn’t by any means 100% clean, but isn’t quite as bad as the regular version. I made a few simple swaps that I believe will teach him the difference in a treat and a full blown calorie killer cheat 😉 Want to try this recipe? Feel free to make it!! But know- it is NOT clean and it does have sugar in it..so proceed at your own risk <3
Berry Oat Cobbler
Mixed Berry Filling
- 4-6 cups mixed berries (I used strawberries, blackberries, blueberries)
- 1/2 cup sugar
- 3 tb flour
- 2 tb fresh lemon juice
- pinch of salt
- 3/4 c brown sugar
- 3/4 c flour
- 1/2 c old fashioned oats
- 1/2 c walnut pieces
- 1 tsp cinnamon
- 6 tablespoons unsalted butter
Preheat oven to 375 and spray a baking dish with nonstick cooking spray. Mix filling ingredients in separate bowl. Spread evenly in the bottom of baking pan.
Mix Oat Topping ingredients together in medium sized bowl. Once evenly mixed, spread over filling in the baking pan.
Bake approx 45-50 minutes or until top is golden brown and filling is bubbly. Let cool before testing, otherwise you will burn your taste tester 😉
