Polenta: How can I make this taste good?
It looks like mushy cornbread in a plastic roll that could resemble cookie dough if I squinted, took off my glasses, and shut one eye……
So what is it?
According to Wikipedia:
Polenta is a Central European dish made by boiling cornmeal into a thick, solidified porridge, and directly consumed afterwards or baked, fried or grilled. The term is of Latin origin, derived from the term for hulled and crushed grain.
Cheesy Polenta Recipe
✅ Gruyere cheese
✅ Coconut oil
✅ Fresh Parsley & Basil & Garlic
~Make Polenta according to directions but use vegetable or chicken stock instead of water. One done add in minced parsley and basil. pour into a lined cookie sheet and allow to cool completely.
~Saute fresh minced garlic in a small amount of coconut oil. While this is happening, cut out circles of your polenta with a biscuit cutter
~ Place into the garlic mixture, cook until browned, flip, repeat.
~ Remove, layer a baking dish with polenta, sauce, cheese. Double or triple stack as needed.
~ to finish, heat thoroughly in a 350°Oven until heated through and cheese is melted
