I am not much of a cook and everyone who knows me, can attest to that. I do however like to eat haha! So, I am trying each week to make 1 new recipe. I found Sweet Potato and Brown Rice Egg Skillet Bake in a gluten free magazine yesterday and decided to give it a try! I did however make some tweaks because I’m a simpler eater and I like to keep the ingredients to 5 or less 😉
- 1lb Turkey Sausage
- 5 whole eggs
- 1 avocado sliced
- 1 red pepper
- 1 sweet potato sliced
- 2 tb feta
1. Brown sausage. Add pepper and sweet potato slices, cover and simmer on low for 15 minutes.
2. In a baking dish pour sausage, peppers, and sweet potatoes on the bottom. Add sliced avocado. Sprinkle with feta. Last- crack 5 eggs and place in each corner then 1 in the middle.
3. Bake at 350 degrees for 15 minutes or until eggs are cooked to your preference.
That’s it!! I told ya, simple and not many ingredients!
