Healthy Breakfast Casserole
If you are like me, then breakfast in your house is a mad dash!! I’m trying to get everyone else ready, fed, out the door and on time! Its crazy!! And because of that, many times someone always ends up skipping breakfast. We can’t have that! Breakfast is the most important meal of the day because it gets your metabolism going. It’s the wake up call to your body that you are now awake, and its now time to start burning calories. Breakfast literally means “break the fast”, and you need it!
In order for my family to have breakfast, it needs to be something quick and easy! This is a favorite in my house! Not only is it healthy, but it actually tastes good and can be made ahead and popped in the microwave to warm up!
5 Egg Whites
2 Cups Fresh Spinach
2 Cups Broccoli
1 Chopped Onion
1 Can Sliced Mushrooms
2 Tablespoons Minced Garlic
1/2 Cup Parmesan Cheese
Sauté the veggies in 2 tablespoons olive oil until they are soft. Then, mix in the cheese until it is melted. Pour the veggie mixture into a baking dish (I use an 8×8). Pour the egg and egg whites over the veggies and bake at 350 for 15-20 minutes. Store in the fridge and heat about for 30-60 seconds.
